1 cup fine quality dates, deseeded
1 cup cashew nuts
1/2 cup grated coconut
A pinch of salt
1 Tbsp refined oil
Soak the dates in water for 1 hour. Drain and pat dry.
In a food processor, add the cashew nuts and grated coconut and blend until crumbly.
Add the dates, salt and oil and pulse again until you acquire a sticky mixture.
Take small scoops of the mixture on your palms, and roll to form balls.
Place the balls on a tray lined with butter paper, and refrigerate for atleast 1 hour.
Serve chilled.
This looks really palatable. And the recipe looks simple enough too. I may give this a try sooner or later. Thanks a lot for posting this mate. You are doing a terrific job. Keep it up.
