INGREDIENTS :
For dough:
all purpose flour 1 cup
Ghee/Oil 3 tbsp
Salt to taste
Water for kneading
For filling:
chick peas (cholay) 1 cup boiled
cumin powder 1 tsp
Coriander powder 1 tsp
Ingredients for yogurt dip (Raita) - for serving
yogurt 1/2 cup
minced Garlic 1/4 tsp
Salt 1/2 tsp
red chili powder 1/4 tsp
cumin powder 1/2 tsp
Method:
First make dough... in mixing bowl add flour, salt, ghee and knead it with water.
Leave it for at least 1 hr to rest.
Make filling first, coarsely mash boiled chick peas, add cumin powder, salt and coriander and make a paste.
Transfer in bowl and cool completely.
Then, make small balls out of the dough.
Roll in round shape.
Put around a tablespoon of filling in middle
And start holding the edges in the middle.
Twist and turn the edges.
Repeat the same process with remaining dough and filling.
Deep fry them in hot oil till golden from all sides
For yogurt dip:
Whip yogurt with garlic, salt, red chili powder and cumin powder.
Transfer in serving bowl and garnish with cumin powder.
Serve kachoris's with raita and enjoy.
