Ingredients:
1/2 cup brown chickpeas (kale chane)
2 cloves (laung)
4 black pepper (kali mirch)
1 piece cinnamon (dal chini)
2 garlic buds (lahsun)
2 tbsp split Bengal gram lentil (chane ki dal)
1/2 tsp salt (namak)
a piece ginger (adrak)
2 bread pieces
1/2 cup refined flour (maida)
2 whole red chilly (lal mirch)
oil for frying

1/2 cup refined flour (maida)
2 whole red chilly (lal mirch)
oil for frying
Method :
1. Soak bengal gram lentil and brown chickpeas for 2 hours.
2. Now cook bengal gram lentil, chickpeas, cloves, black pepper powder, ginger, garlic buds and 1 cup water in a pressure cooker.
3. Water should dry up completely. When it cools then grind it in a mixer.
4. Soak bread and press with both the hands to retain water. Grind it with chickpeas in a mixer.
5. Make kebabs of the mixture.
6. Coat the kebabs in a bowl of maida one by one.
7. Heat oil in a pan and deep fry all kebabs in it.
8. Serve them hot.

Ingredients:
Soya Nuggets - 1 packet
Salt as required
Bread slices -2
Green chillies- 9-10
Corrainder leaves
Onions chopped -2
Garam masala- 1/2 tsp
Mango powder - 1/2 tsp
Pepper powder- 1/4 tsp
Roasted Cumin seeds- 1/2 tsp
Besan or Maida 1/2 cup
Chutney or sauce (serving suggestion)
Method:
Soya Nuggets - 1 packet

Method:
- Take soya nuggets.
- Soak soya nuggets in hot salt water. Drain, squeeze and repeat the procedure twice.
- Take bread slices, chopped onions, green chillies and coriander.
- Make a paste of chillies, onions and coriander in a blender and keep aside.
- Make a paste of boiled soya nuggets and bread slices in a blender.
- Mix the green paste and soya nugget paste in a bowl.
- Add salt, garam masala, cumin seeds, pepper powder and mango powder and mix well.
- Shape the mixture into small round flattened balls or kebabs and slightly dab the kebabs in besan powder before frying to absorb any moisture.
- Place the kebabs on the pan and shallow fry, turning sides, till golden all around, one at a time.
- Serve the crispy kebabs hot with sauce or dip or chutney of your choice.

Ingredients:
500 grams Chicken breasts
6-8 nos. Green chillies
2 tblsp Coriander leaves
2 tblsp Mint leaves
12 nos. Garlic
8-10 nos. Almonds
3/4 cup Fresh cream
1 inch Ginger
1 tblsp Lemon juice
Oil
Salt
Method:
Wash and chop the chicken breasts into 1 1/2 inch cubes.
Grind the green chillies, almonds, ginger-garlic, mint and coriander leaves to a fine paste.
Apply this paste to the chicken.
Add the cream and mix well before adding salt to taste.
Allow the chicken to marinate overnight for best results.
Thread on skewers and grill over charcoal, basting with oil or ghee.
Serve hot with lemon wedges.

Ingredients:
100 gms cheese grated
...40 gms chopped onion
30 gms chopped ginger
10 gms chopped fresh coriander
cornflour to dust
30 gms cashewnut powder
30 gms chopped raisins
4 gms white pepper powder
4 gms cardamom powder
salt to taste
oil to grill
Method:
1. Hang yoghurt overnight.
2. Saute the onion and ginger in minimum oil till it sweats.
3. Mix all the other ingredients and mix well.
4. Shape into tikkis.
5. Grill them on a medium hot skillet with minimum oil.
6. Garnish and serve with chutney.

Ingredients:
50 gms Palak
...60 gms Cornflour
1 tsp Garam masala
1 tsp Chilli powder
1 tbsp Pepper powder
1 tsp Coriander powder
Salt to taste
oil for frying
METHOD:
1. Blanch spinach leaves in two cups of boiling salted water for five minutes. Drain, refresh in cold water and squeeze out excess water. Finely mash.
2. Grate paneer and mix with palak .
3. Add salt, pepper, garam masala and other powdered masalas.
4. Add cornflour, mix well.
5. Shape each portion into a ball and then press it between your palms to give it a flat tikki shape.
6.In a large nonstick skillet over medium-high heat, heat 2 tablespoons of the oil and fry the tikkis.
7. Serve with mint chutney or sauce.
